2 tbsp. olive oil
1/2 large yellow onion
2 garlic cloves
2 tbsp. fresh basil
1 1/2 tsp. fresh mint
3/4 tsp. fresh oregano
3/4 tsp. fresh thyme
3/4 tsp. fresh rosemary
1 28-oz. can crushed tomatoes
1/4 tsp. cayenne pepper
1 tbsp. red wine vinegar
1/3 cup whipping cream (optional)
Chop the olive oil, onion, garlic and herbs in a food processor. Saute in pan until soft. Add tomatoes, cayenne pepper and red wine vinegar. Simmer for 20 minutes. (We blended the sauce here so it was really smooth.) Add cream to finish. Season with salt and pepper.
We cooked 1 lobster tail (chopped into 8 pieces) in the sauce for ~6 minutes before adding the cream, and then finished the sauce & lobster together.
